Give Peas a Chance!
English peas are simply the best in the world. Their seasonal arrival signals the start of summer; sweet, fragrant with a delicate & addictive flavour. At Lettice Events we use thousands of them during the summer months.
We have created a cocktail to utilise all parts of the discarded pods. Our General Manager’s favourite mouthful of food was at a restaurant in Paris called Septime, where they served Pea Pod Ice Cream & Olive Oil. This cocktail is an homage to that! Not only using the discarded pea pods to flavour Sapling Spirits gin. We add discarded cucumber skins & long in the tooth mint leaves to enhance the garden like flavours of this delicious drink. Enjoy this floral and refreshing cocktail all summer long!
Ahead of Time
Pod 500g of English Peas (eat the peas! – when fresh raw is best, try them with lovage oil, elderflower vinegar & salt). Take the discarded pods a fill a 750ml Swing Top bottle with the pods – keeping a handful of the pods to make the sherbet & garnish Place 8-10 pods into the dehydrator at 65C overnight. Cover the pods in your swing top bottle with Sapling Spirits Gin – infuse for at least 48 hours. To make the Pea Pod Sherbet to rim your glass, blend your dried pea pods with 100g of caster sugar, add 1 teaspoon of citric acid and a pinch of Maldon Salt.
Ingredients
- 50ml of Pea Pod Sapling Gin
- 25ml St Germain
- 15ml Homemade Elderflower Cordial
- Juice of half a lemon
- Discarded skin from ¼ cucumber
- 3 mint leaves
- 75ml Double Dutch Soda
Method
Rim half your cocktail glass with the Pea Pod Sherbet. Add all the ingredients to a Boston Shaker with a handful of ice, except the Double Dutch soda water. Shake vigorously – the drink will go a beautiful pale green. Double strain over ice, top with the soda & stir. Garnish with picked mint tops & a dehydrated pea pod which will go beautifully curly!
