Homemade Limoncello
Homemade Limoncello
At Lettice we love Limoncello! There is something magical about the hospitality of after a perfect Italian feast you are delivered a lovely short, sharp pick me shot of sunshine.

To capture that feeling we make our own Limoncello from special seasonal Meyer Lemons.
Meyer lemons are a cross between a mandarin and a citron deep yellow and very aromatic, they taste like lemon sherbet.

Limoncello Recipe
In its simplest Limoncello, is lemon flavoured vodka. To make it special we use all of the lemon, not wasting anything!
Ingredients:
- 500g Meyer Lemons & their juice
- 500ml Vodka (we use Sapling Spirits Vodka)
- 500g Panela
- 500g Meyer Lemon Juice
This couldn’t be simpler! Peel you Meyer Lemons using a speed peeler. Removing as much of the pith as possible. Add this to your vodka. You can just leave this for weeks in a dark room if you have time, but to speed the process up place the peel and vodka mix into a sealed container and place into your oven at the lowest setting ideally 50C and cook overnight.
The next day – strain the lemon peel. Use the reserved juice from your lemons and make a lemon syrup. By adding equal weights of panela (raw sugar) to your lemon juice. Combine the lemon vodka and lemon syrup. Bottle and enjoy. We keep ours in the freezer to enjoy ice cold straight after dinner.
