The Top Wedding Catering Trends of 2025

With wedding season always on the horizon, couples are increasingly looking for unique ways to wow their guests, and catering is no exception. The trends for 2025 are shaping up to be both delicious and unforgettable. Our Managing Director, Holly Congdon, sat down with The Wedding Edition to give the inside scoop on wedding catering trends for 2025, from personalising your wedding menu to her best advice for couples planning their big day.

What are the top wedding catering trends you're predicting for 2025?

We love seeing what each wedding season will bring and every year is always different! We are looking to late night bites as the perfect end to any party. Think DIY ramen bars and silver service chip trolleys. The rise of the oversized wedding cakes knows no bounds and we are seeing more couples using this as their showstopping dessert, some of them even adding the finishing touches themselves before serving!

How can couples personalise their wedding menu to reflect their story?

Food is a real teleportation device and bringing guests along your journey is always such an important part of a wedding. Wee love working with couples to maximise he little moments. We recently worked with a lovely couple who are obsessed with caviar. We made them a caviar trolley which wheeled around their dinner guests, toasting the day with bumps of Beluga! What makes a wedding is moments like these and our planners are always ready for the next challenge!

What's your take on plant-based and sustainable catering options for weddings?

We want all of our couples to know that by working with Lettice, we have taken every step to make your wedding as sustainable as possible. Being a B Corp business, carbon neutral and environmentally accredited for our practices. we have ensured that our couples only need to worry about their guests and we will take care of the rest.

We have seen an increase in plant-based weddings over the last year and we absolutely love to create bespoke menus that highlight some of the incredible seasonal produce we have here in the UK. We have other little touches that we like to add, such as our plantable menus, which grow into wild flowers after the wedding our our suppler map, which shows where all of our ingredients come from, which some couples have been adding to their menus.

How do you work with couples to accommodate different dietary requirements while still delivering a brilliant menu?

The reality now is that we expect around a quarter of guests at weddings to have a dietary requirement. We tell the couples to pick their dream menu and let us adapt the dishes for those who need it. For example, one of our favourite starters is our Barbecued Tenderstem broccoli, stracciatella, sourdough crumb & green sauce. For this, we use the amazing Julienne Bruno Burrella as a dairy alternative and honestly, you can’t tell the difference and it means we can ensure that any alternatives are as good as the main dish.

What kinds of interactive food stations or experiences do you think will be popular in 2025?

Our couples always describe themselves as foodies and we love to bring their favourite experiences from restaurants to life. This is becoming a huge part of how we develop our menus and the interactive food stalls. Our favourite feasting table for 2025 are our endless bars. We want to showcase the incredible ingredients we use from organic farms across the UK and we have created endless tables that highlight the best of each season from crudité bundles to perfect toast toppers for guests to feast on.

What advice would you give to couples when selecting their wedding caterer?

We always tell couples that picking a wedding caterer is a bit like dating. You are going to spend a lot of time together planning the details of the day and you have to work with someone that understands your vision and is invested in throwing you a great party. We always do a bit of matchmaking with our couples and pair them with the perfect event planner from our team based on different metrics like venue or the aesthetic. My favourite is always a bucolic country wedding, I always try and take those for myself!
