Winter Salad Dressing
Ingredients:
- 10 quinces
- 50ml quince syrup
- 20ml red wine vinegar
- Half a teaspoon of sugar
- 1 pinch salt
- 2 tablespoons of water
- 50ml extra virgin olive oil
- 50ml grapeseed oil
Step 1:
Start by washing your quince. Quarter your quince and place in a blender with 1 cup of water. Blend on high speed until as smooth as possible then pass through a fine sieve.
Step 2:
Place into a shallow wide-based pan and place on low heat. Reduce this until it thickens slightly and becomes a syrup. Skim off anything that settles on the top that doesn’t look nice.
Step 3:
Pour the liquid through a sieve halfway through and change into a fresh pan to filter out any impurities. This is very similar to pomegranate molasses crossed with balsamic vinegar and makes an incredible salad dressing.
Step 4:
The recipe will depend on the quince as they change throughout the season but use this as a foundation recipe and tweak if necessary. Use the best quality vinegar and oil you can get hold of.
Tip: When you make this do not mix too vigorously as you don’t want to emulsify the dressing, instead keep it split.
Now you have your quince dressing, try it with some bitter winter leaves such as castel franco or raddichio finished with some shaved Berkswell cheese. This versatile dressing goes with anything!
